Jane Undhiyu Banane Ke Liye Aavshyak Samagri:-

Jaruri Sabjiya
  • Sem phalli- 200g
  • Chhote began- 100g
  • Chhote aloo- 250g
  • Kacche kele- 150g
  • Shakarkand- 150g
  • Kand- 100g

 

Masala Bharne Ke Liye
  • Tel- 4 se 5 chhoti chammach
  • Hing- 2 chutki
  • Ajwain- ½ chhoti chammach
  • Namak- Swadanusar
  • Lal mirch powder- ½ chhoti chammach
  • Dhaniya powder- 2 chhoti chammach
  • Aamchur powder- ½ chhoti chammach
  • Garam masala- ½ chhoti chammach
  • Chini powder- Swadanusar
  • Til- 2 chhoti chammach
  • Mungphali dane– 2 chhoti chammach
  • Kaju- 2 chhote chammach
  • Adrak- 2 inch tukda (Kaddukas kiya)
  • Hari mirch- 2 se 3 barik kati hui
  • Hara dhaniya- 1 cup barik kata hua
  • Taja nariyal- 2 se 3 chhote chammach kaddukas kiya

Muthiya Banane Ke Liye Samagri
  • Besan- 1/3 cup
  • Gehu ka aata- 1/3 cup
  • Namak- swadanusar
  • Dhaniya powder- ½ chhoti chammach
  • Lal mirch powder- ¼ chhoti chammach
  • Haldi powder- ¼ chhoti chaammach se kam
  • Methi- ½ cup barik kati hui
  • Tel- Muthiya talne ke liye

 

Jane Undhiyu Banane Ke Liye Vidhi:-

  1. Gujarati Undhiyu banane ke liye sabse pehle sari sabjiyo ko pani se dho le, iske bad bad muthiya banane ke liye besan mai sare masalo ko dale aur 3 chhoti chammach tel milakar pani ki sahayata se aata gunth le.
  2. Aate ko pudi ke aate se thoda jyada sakth rakhe aur 10 minute ke liye rakh dijiye taki aata acche se set ho jate.
  3. Muthiye ke aate ko thoda thoda sa lete huye mutthi banate huye 2 inch lambe role bana le. Iss tarah pure aate ke role bana le.
  4. Ab ek kadhai mai tel ko dale aur garam tel mai muthiyo ko tal le. Gas ki aanch medium hona chahiye aur muthiyo ko bhura tatha kurkure hone ke bad tel se nikal le.
  5. Kand tatha shakarkand ko chhil le aur aadhe inch ke tukdo mai kat kar inhe bhi tel mai crispy hone tak tal le.
  6. Ab til, mungphali ke dano ko bhun le aur ihne kaju ke sath milakar dardara pees le. Ab ise ek plate mai nikal le.
  7. Isme kaddukas kiya hua adrak, hari mirch, lal mirch, hara dhaniya, haldi powder, dhaniya powder, aamchur powder, nariyal aur garam masala dalkar sabko mix kar le aur thoda sa nimbu ka ras dal de.
  8. Iske bad kele aur sem, began, aloo sabhi sabjiyo ko bich mai se kat le tatha unme bana hua masala dal kar bhar de.
  9. Ab cooker mai 4 chhoti chammach tel dale aur garam kare tatha isme ajwain, hing aur ¼ chammach haldi dale. Jab ajwain bhun jaye to isme masale bhari sabjiya dal de aur 2 minute tak chalaye.
  10. Ab aadha cup pani cooker mai dal de tatha cooker ko band kar de. Iss cooker mai karib 15 minute tak pakaye cooker ke pressure se sari sabjiya pak jayegi.
  11. Iske bad gas ko band kar de aur cooker ka pressure nikal de tatha isme tala hua kand shakarkand aur muthiya dal dijiye.
  12. Sabko 5 minute cooker ko band kar gas par maddhi aanch mai pakaye dhyan rakhe sabjiyo ko chalana nahi hai. 5 minute bad gas band kar de aur cooker kholkar usme hara dhaniya dal de.
  13. Aapka undhiyo taiyar hai. Ise garam garam plate mai nikale aur parathe, puri tatha chapati ke sath khaye.
